How do you grade and value a batch of Japanese Kippin abalone during an emigration clearance? A real Sha Tin case involving 10 old sugar-heart pieces

Before emigrating, a Sha Tin customer was clearing cupboards and wanted to deal with 10 Kippin abalones left by an elder in one transaction. The customer worried that their sugar hearts might prove underdeveloped after cooking and create a large valuation gap. Colour translucency, skirt contraction, and shape can indicate the likely direction, and the sugar heart generally becomes more pronounced with ageing. However, photographs can have colour and angle differences, so a final conclusion still requires an in-person assessment of texture and aroma.

Can a full batch of old abalone be bought at one blanket price?

No. With one price for an entire batch, the seller usually loses out on the pieces with the best sugar hearts. We therefore quote separately by sugar-heart tier and head count for fairness.

If the packaging says Kippin abalone, will you buy it as Kippin abalone?

We do not rely on the packaging alone. During the in-person inspection, we check the abalone's shape, skirt, colour, and aroma, and quote only after confirming the physical goods. The packaging is a reference only.

Does a translucent centre necessarily mean it has a sugar heart?

Not necessarily. We must assess whether the translucent colour looks natural and the aroma is normal, as well as whether the body has absorbed moisture or lost aroma. Translucency accompanied by aroma loss still warrants a deduction.
