Honeydew abalone is the top grade among all dried abalones. This is because it boasts superior texture, flavor, and nutritional value, making it the first choice for all abalone lovers.
To produce honeydew abalone, fresh abalone must undergo multiple drying processes, as fresh abalone itself does not have a "honeydew" center. Honeydew dried abalone is darker in color, brownish-red, with a rich sweet taste (derived from the transformation of some proteins in the fresh abalone itself) and abalone aroma, distinguishing it from sun-dried abalone.

When fully dried honeydew abalone is stored for a period, a layer of white frost may appear on its surface. This is due to proteins within the abalone migrating to the surface. Far from harming the abalone's quality, this is one of the important indicators of high-grade abalone.
While each producer has different techniques for sun-drying honeydew abalone, the selection criteria are the same: only fresh and large abalones can be used. Small abalones are difficult to process into decent honeydew dried abalone; similarly, unfresh abalone, due to protein degradation, cannot be processed into honeydew abalone.
If 100 catties of fresh abalone are processed into dried abalone, honeydew dried abalone yields about 90% of sun-dried abalone. Therefore, when we rehydrate honeydew dried abalone, we will find that its volume is slightly larger than that of sun-dried abalone, which is one of the reasons why honeydew dried abalone is more expensive than sun-dried abalone.
Among bird's nest, abalone, and fish maw, abalone is the most precious. While the other two inherently lack flavor, abalone truly possesses its own unique and distinct taste.
