- 20–30 pieces/catty: top-grade specification, mostly used for high-end gifts
- 30–50 pieces/catty: high-end household use
- 50–80 pieces/catty: mid-to-high grade
- Over 80 pieces/catty: daily edible grade
Beyond piece count, colour, spine firmness, completeness of the underside and rehydration ratio all affect price. High-quality sea cucumber may expand to 5–8 times its dry volume after soaking.
Sea cucumber storage methods
Moisture and insect damage are the main threats to dried sea cucumber. Divide it into airtight bags, vacuum-seal them and store them in the freezer; this can preserve the product for more than 5 years. If slight dampness appears, air-dry it in a cool, ventilated place before resealing. Do not leave it in a humid kitchen cupboard for extended periods.
