How does a shop inspection work when you bring in the goods? A real San Po Kong case involving the on-the-spot weighing and settlement of 8 aged net abalones

A San Po Kong resident had stored 8 aged net abalones. When held against the light, their centres showed the characteristic translucent reddish-brown 'sugar heart'. The customer wanted a clear face-to-face inspection and payment the same day, so brought the goods to our shop. Yes. When Japanese dried abalone has aged sufficiently, its centre appears translucent reddish-brown against the light, resembling caramelised sugar; this is called the sugar heart. It becomes more pronounced with ageing and indicates prolonged, sound storage.

At the same size, which is more expensive: net abalone or Kippin abalone?

At the same grade, net abalone generally commands a noticeably higher unit price than Kippin abalone because of its distinctive net-like pattern and smaller supply. Actual value still depends on the years of ageing and storage condition, so this is not guaranteed.

For an accurate assessment, should I look at the variety or the head count?

Both. The variety sets the market tier, while the head count, weight, and storage condition determine the final amount. An estimate is unreliable without any one of them.

Does a sugar heart guarantee a high selling price?

A sugar heart is a positive factor, but it cannot determine the value alone. The variety, head count, completeness, and storage condition must also be considered. A mouldy smell, cracks, or breakage will still lead to deductions.
