In the trade, higher-value edible bird's nest is often grouped by colour as red, yellow or white nest.

Edible bird's nest—also known in older usage as yan cai or yan gen—is built by swiftlets from hardened saliva with small amounts of down. A whole cup resembles a Chinese sycee: densely layered fibres form the outer wall, a looser mesh lines the inside, and the base is firm with small points at both ends. Typical cups are described as about 6–7 cm across and 3–4 cm deep.
