What We Look For in an Appraisal

50 catties cannot be treated as a single item with one price; it's fairer to grade it. The in-person appraisal first verifies that the physical goods match the photos, then proceeds to grade each batch. For this batch, we conducted spot checks in different areas and weighed each batch individually, dividing them into four quality grades:

  • Top-grade male maw (12 catties): Thick flesh, deep纹理 (texture/pattern), excellent rehydration. This is the most valuable part of the entire batch.
  • Premium grade (20 catties): Sufficient aging, intact maw body, stable appearance.
  • Mid-grade (12 catties): Slightly lighter color or average thickness, a normal market grade.
  • Scraps (6 catties): Small pieces, minor flaws. These are still graded and priced separately and will not drag down the price of the high-quality items.

Each grade is priced separately, ensuring that the top-grade male maw is not mixed with the scraps to lower the average price. Based on current wholesale market conditions, this batch is generally at a higher-than-average level, with the top-grade male maw having the most outstanding unit price.
