A dried seafood shop in Tuen Mun, which has been in business for three generations, is retiring its second generation. - Mid-grade (12 catties): Slightly lighter color or average thickness, a normal market grade.
- Scraps (6 catties): Small pieces, minor flaws. These are still graded and priced separately and will not drag down the price of the high-quality items.
Each grade is priced separately, ensuring that the top-grade male maw is not mixed with the scraps to lower the average price. Based on current wholesale market conditions, this batch is generally at a higher-than-average level, with the top-grade male maw having the most outstanding unit price.
