Sea cucumber completeness is checked at both the exterior and the existing abdominal opening. Pale internal tendons may remain attached to the body wall, while the mouth end can retain a sand-filled ring or rough mouthparts if cleaning was incomplete. Their presence provides processing evidence; their absence does not automatically prove substitution. Appraisal combines these observations with body form, papillae, cut quality, centre dryness, additives, odour and damage.

Internal tendons should look connected, not inserted

Natural longitudinal bands are usually cream to pale yellow and run along the inner wall. Depending on species and preparation, some may remain, be trimmed short or be removed during cleaning. Firm centre dryness and a clean marine-stored aroma support preservation. Heavy salt crystals, sugary stickiness, oily sheen, rancidity, insect activity, fuzzy growth and spreading discolouration are recorded independently. Surface dust is not brushed away before it has been identified and weighed where relevant.
