Sea cucumber completeness is checked at both the exterior and the existing abdominal opening. Pale internal tendons may remain attached to the body wall, while the mouth end can retain a sand-filled ring or rough mouthparts if cleaning was incomplete. Their presence provides processing evidence; their absence does not automatically prove substitution. Appraisal combines these observations with body form, papillae, cut quality, centre dryness, additives, odour and damage.
Internal tendons should look connected, not inserted
Natural longitudinal bands are usually cream to pale yellow and run along the inner wall. Depending on species and preparation, some may remain, be trimmed short or be removed during cleaning. A reviewer notes their attachment, colour, dryness and consistency instead of applying a universal tendon count.
Loose strips placed inside the cavity do not restore completeness. An abrupt glued point, different texture or unrelated smell would be adverse. Equally, an empty cleaned cavity can be a normal processing choice, so it must be described accurately rather than labelled counterfeit.
The mouth end records how cleaning was performed
At the front end, remnants of the feeding structure and a gritty sand ring may survive preparation. A neatly cleaned mouth is not necessarily a defect. Residual sand, however, adds non-product weight and can conceal damp matter, while decayed tissue or an unpleasant local odour lowers condition confidence.
The mouth outline is compared with the opposite end and overall body symmetry. A straight factory cut, torn opening or rebuilt tip may affect identification. No probe should be forced through a closed body merely to search for parts; existing cuts and transmitted light usually provide safer evidence.
Completeness extends beyond two internal features
Papillae or spines, dorsal profile, abdominal cut, wall thickness and natural taper are mapped together. Breakage during drying can be genuine damage, whereas repeated identical shapes may reflect moulding or heavy processing. Stated Kanto, Kansai, Dalian or other origin still requires traceable packaging because morphology alone can overlap.
Firm centre dryness and a clean marine-stored aroma support preservation. Heavy salt crystals, sugary stickiness, oily sheen, rancidity, insect activity, fuzzy growth and spreading discolouration are recorded independently. Surface dust is not brushed away before it has been identified and weighed where relevant.
Kam Hoi Shing can state which structures are present, absent by normal cleaning, damaged or uncertain, then relate them to type confidence and current condition. Tendons and mouthparts do not create a medical grade, nor does one missing feature dictate a fixed commercial deduction. The strongest report explains the whole processing pattern and avoids destructive opening, allowing another assessor to review the same evidence later.
