Japanese Kanto dried sea cucumber is commonly associated with Apostichopus japonicus, a firm-bodied spiny sea cucumber. In trade comparisons it often shows about four principal rows of papillae, while Hokkaido material may appear denser, but row count is not an infallible origin test. Sai Kung collectors should assess morphology, size count, drying, adulteration, condition and provenance together.
Read the body before counting the spines
A sound Kanto specimen typically has a dark grey-brown body, a defined underside and visible dorsal papillae. The often-repeated "four-row" description is a useful orientation, not a legal certificate. Drying can flatten or break projections, natural individuals vary, and some material sold under narrower regional names may show more rows while remaining less densely armed than classic Hokkaido stock.
Hokkaido sea cucumber is frequently described with six orderly, long and closely spaced rows, while Kansai products tend to look rounder with blunter projections. These comparisons work best when several intact specimens from one lot are viewed side by side. Counting damaged points on a single piece can create false confidence.
Specification and processing shape the grade
Head count tells how many dried sea cucumbers make up a fixed trade weight. Fewer pieces generally mean larger individuals, although the unit must be confirmed. Wall thickness and even form matter alongside size. Traditional light drying aims to remove enough moisture without loading the product with excess salt or sugar.
Rehydration potential is sometimes used as a quality clue because well-processed Japanese spiny sea cucumber can expand substantially while retaining resilient walls. It should not be tested on a collectible appraisal lot without agreement, and no expansion multiple authenticates origin by itself. Added salt, sugar, water or other treatment can distort dry weight and later performance.
Storage checks for a Sai Kung collection
- Dry specimens should be firm, not bend easily or feel tacky.
- The smell should be mild and marine, without rancid oil, mould or harsh chemicals.
- Papillae and body walls should remain reasonably complete, with no pest powder.
- Original Japanese labels, geographical indications or invoices support provenance when consistent with the contents.
- Keep the lot away from kitchen oil, steam and strong-smelling dried goods.
Sea cucumber contains protein and compounds studied in laboratories, including saponins, but composition does not prove a personal health effect. Market grade is determined through identity, craft and condition, not medicinal potency.
For a preliminary Sai Kung appraisal, show the whole batch, both body surfaces, end details, packaging and declared weight. Kam Hoi Shing can then decide whether direct weighing and inspection are warranted. This avoids reducing a complex regional identification to the attractive but incomplete slogan of four rows versus six.
