cordyceps
Cordyceps sinensis (referred to as "cordyceps") consists of a connected insect body and stroma, with a total length of 9-12 cm. The insect body resembles a silkworm in its third molt, about 3-6 cm long and 0.4-0.7 cm thick. Its outer surface is dark yellow, rough, with numerous horizontal wrinkles on the back, and 8 pairs of feet on the ventral side, with the 4 pairs in the middle of the insect body being clearly visible. Identification primarily involves the following five aspects:

1. Observe the appearance
Fake cordyceps have a more appealing color than real cordyceps. Grassland cordyceps are different from forest cordyceps; grassland cordyceps are yellowish-brown, with a plump insect body and soft flesh; forest cordyceps are reddish-brown, with a full and firm insect body. Both types of cordyceps, if genuine, will have white flesh when broken, with dark spots and a medullary cavity. Additionally, the connection between the head of a real cordyceps and the stroma is very well-matched, with no obvious signs of adhesion; the real insect body has annular rings, with three rings forming a group, arranged in sequence, and the rings near the head are finer; fake cordyceps, however, have symmetrical bumps on one side and parallel, equally spaced stripes on the other, typically molded.

2. Smell the aroma
Real Cordyceps sinensis has a natural mushroom aroma and a slightly fishy smell, while fake cordyceps generally have no scent.

3. Test the feel
When you hold a handful of real Cordyceps sinensis, it will have the texture of dry grass and feel almost weightless. Rubbing the insect body and stroma back and forth in your palm will not result in any staining. After putting down the cordyceps, your hands will only have some sand and sawdust, with no unidentified powdery residue. Fake cordyceps, however, often reveal flaws in these aspects.

4. Taste the flavor
Cordyceps sinensis is crispy like green beans when eaten, becoming more fragrant with chewing, and has a sweet taste similar to mushrooms. Fake cordyceps, when chewed, will have a hard, gritty, and teeth-grinding sensation, like chewing licorice. After being moistened by saliva, it will not have the mushroom aroma but will have a muddy taste.

5. Observe after soaking
When fake cordyceps are soaked in boiling water for 10 minutes, they will gradually reveal their true form: the yellow outer layer will peel off, and the fake stroma will also begin to detach from the insect body. When real Cordyceps sinensis is soaked in boiling water, the insect body will swell and soften, the stroma will darken to a black-brown color, and the insect body and stroma will remain firmly connected, without detaching. The soaking liquid will have a slight odor.
