A single test can cost hundreds to over a thousand Hong Kong dollars, far more than one jar is worth. As buyers cannot control the risk of counterfeits on site, they may simply refuse the goods.
2.4 Spoilage risk and an unverifiable cold chain
Freshly stewed bird’s nest is marketed with a short shelf life of 15–30 days and refrigerated distribution. Without 121°C sterilisation, its protein and water content provide favourable conditions for bacterial growth. During resale, even a brief temperature excursion or a small leak in a lid can lead to excessive bacterial growth or mould. A buyer cannot verify the seller’s past refrigeration conditions and would take on substantial food-safety and legal risks.
