Male and female fish maw cannot be separated by one universal mark. Within a confirmed variety, male forms often show a firmer thick-and-thin structure, stronger longitudinal or chevron grain and a narrower profile; female forms may be broader, thinner and more evenly soft. Appraisal still requires species identity, size, dryness, ageing evidence, completeness and storage condition.
Confirm the variety before assigning sex-related form
White Flower, spider, red-mouth, Zhajiao and other maws express anatomy differently. A pair of creases meaningful in one category may be ordinary processing in another. Begin with the full outline, head and tail structures, openings, attachment points and fibre direction. Only after those features support a variety should the assessor compare male and female forms from an appropriate reference set.
Trade descriptions commonly associate male maws with a substantial centre that becomes thinner toward selected edges, plus more pronounced lengthwise or chevron patterns. Female examples are often described as rounder or flatter, with thickness distributed more evenly and transverse or wavy grain. These are tendencies, not a shortcut. Cutting, flattening and regional processing can change the silhouette that reaches a Hong Kong cupboard.
Cooking language should not become an unsupported claim
Male-form maw is often preferred where a firmer piece that retains shape during prolonged preparation is desired. Female-form tissue may soften more readily and contribute more body to a liquid. Those culinary differences can influence demand, but they do not justify medical statements or a fixed multiplier. A well-preserved female example can be more usable than a damaged or incorrectly identified male-labelled piece.
Direct inspection adds firmness, edge transition, smell and transmitted light to the visual comparison. Both forms lose practical appeal when the centre remains damp, oil has migrated, pests have eaten through important anatomy or mould-like growth is active. Deep amber colour may support an older storage history, yet documents and custody still matter when an exact age is claimed.
Photograph the evidence that allows another reviewer to disagree
Capture both faces, a side profile, the thickest point, every crease or opening and the head end beside scale. If a box contains mixed shapes, number the pieces before sorting them. An appraisal should explain which markers support variety and which support sex-related form, followed by net dry weight and defects. Transparent reasoning is more useful than declaring that every male piece belongs above every female piece.
Allow an unclassified result when sex markers conflict
Some pieces have been cut, flattened or repaired so extensively that the original thickness pattern is no longer clear. Others sit between male and female trade references for their variety. In those cases, describe the visible grain and structure without forcing a binary label. An uncertain classification can still include identity confidence, dimensions, dryness and defects. Preserving that uncertainty is more accurate than using a male term merely because current buyers tend to favour it.
