4. Why are old abalones more valuable? The preciousness of aged abalone.

Like bird's nest and fish maw, dried abalone gets better with age. There are two reasons for this:

  1. Moisture loss, weight reduction: Freshly harvested abalone contains about 15-20% moisture. After five years, this drops to about 5%. This means that one catty of new abalone, after a few years, will only weigh about eight and a half taels. From our perspective, directly acquiring a batch of "old abalone" that has been passed down is actually more cost-effective, because the moisture has already dried out, and what remains is solid abalone meat.
  2. Aging creates "sugar heart": When high-quality Yoshihama or Kippin abalone is stored for a long time, the internal proteins slowly change. When stewed, the center will become gelatinous and sticky to the bite. This is what the industry calls "sugar heart." Old abalone with a sugar heart often fetches more than 30% higher on the secondary market than new abalone.

5. Case Study: Mrs. Ho from North Point's Box of 28-Head Kippin Abalone Transaction

This case was just completed last month.   3. Inspect storage condition:
    • It's normal for abalone to have white frost (salt bloom) on its surface, no need to worry. But if you see granular powder or tiny holes (wormholes), it means it has been infested with insects. You must find someone to appraise and convert it to cash as soon as possible; do not delay, or it will truly be wasted.
