What does "how many heads of abalone" mean?

The so-called "heads of abalone" does not refer to how many you want to buy, nor how many heads the abalone itself has. Instead, it is a measure of abalone size, indicating how many abalones make up one catty (approximately 600 grams). Generally, the larger the abalone, the fewer pieces it takes to make a catty. Such abalones are the most nutritious and delicious, and therefore relatively more expensive.

Taking dried abalone as an example, in simple terms, abalone grades are divided into premium dried abalone (2-4 heads), special dried abalone (6-9 heads), first-grade dried abalone (10-16 heads), second-grade dried abalone (17-40 heads), and third-grade dried abalone (>40 heads). The smaller the "head" count, the rarer the abalone, especially those like "double-head abalone," which are extremely difficult to acquire. Common high-grade abalones are typically 3-head abalones, which are of moderate size and excellent taste.
